Yummy Chicken with Orzo and Roasted Tomatoes

A couple of nights a week I work late so coming home one night I had a strong craving for red sauce but was Italian ?fooded? out. So, I decided to create a quick Greek chicken with tomatoes. It was really good so I thought I?d share.

Preheat the grill about 5 minutes before you put chicken on.

Mix together in saucepan:

Let the flavors blend over a low heat for about 20 minutes.

When meat has marinated for about 20-30 minutes, grill and cook thoroughly.

Boil water for the Orzo and when water is boiling , cook Orzo according to package directions.

When chicken is cooked, slice into strips and set aside. Drain orzo.

Place ¾ c. orzo on plate, top with chicken and cover with ½ c. of tomato mixture. Top with 1TBSP Feta Cheese (optional) Yum!

I serve this with a nice mixed green salad and green beans. Enjoy!
