Roasted Butternut Squash

One of my favorite veggies, hands down is butternut squash. It's so versatile and a wonderful substitute for the traditional "side of potatoes". Loaded with nutrition, and the taste just YUM! So here is one of my fast-n-easy ways to prepare butternut squash!

Preheat oven to 400.

1 med butternut squash

1 med red onion chopped

Rosemary (fresh, 1 stalk, dried, 1/2 tsp.)

Olive oil

Pepper (cayenne is a unique option) 1 tsp.

Sometimes I'll add in a bit of nutmeg or cinnamon during the holidays.

 

Peel squash and cut in to 1" squares. Mix squash and red onion together and place in glass cooking dish coated with olive oil spray or coated in a light layer of olive oil. Once squash and onions are in the glass dish, sprinkle with rosemary and your choice of pepper. Lightly drizzle with olive oil and stir to mix thoroughly. Roast for 30-45 minutes. Stir after 20 minutes and repeat every 10 minutes until done. Enjoy!
