  • 4 chicken breasts
  • 1 bottle of BBQ sauce
  • 4 slices Swiss Cheese
  • Fresh Asparagus (or small bag of frozen)

Marinate 4 chicken breasts in a half bottle of BBQ sauce (watch sodium and sugar) for a minimum of 2 hours

On a low grill, cook chicken breasts until done (approx. 8-10 minutes per side depending on grill). Be sure and coat chicken with BBQ sauce when you turn it and again before you put on asparagus (see below)

While the chicken is cooking either cook asparagus until soft or thaw frozen.

About 4 minutes before chicken is done, place 3-4 spears of asparagus on chicken and then top it with a slice of Swiss Cheese. Cook until cheese melts. Take off grill and cool for about 5 minutes. Serve with brown rice and acorn squash and salad, yum!
