4 (4-6 oz) skinless, bones chicken breasts (in half)
1/8 tsp. garlic salt
1/8 tsp. red pepper
1 tablespoon olive oil

c. chopped onion
½
tsp. minced garlic
1 ½ cups fat-free (low sodium) chicken broth
6 plum tomatoes, chopped
4 c. fresh spinach
1 tablespoon butter
4 cups hot cooked penne ( I prefer the smaller pene)

c. grated Romano/Asiago cheese combination
2 tablespoons fresh basil (chopped)
To prepare:
1.) Cut chicken into 1 inch pieces and sprinkle with salt/pepper
2.) Heat olive oil in a large nonstick skillet over medium heat; add chicken,
onion and garlic. Saute for 5 minutes or so, stirring frequently. Stir in
broth and tomoatoes. Bring to a light boil; reduce heat and cook 5 minutes,
stirring occasionally. Add spinach and butter and cook for 2 minutes.
3.) Toss chicken mixture with pasta and top with cheese and add chopped basil
just before serving.
