A wonderful summer dish that is light and goes beautifully with a light Caesar
salad and a single slice of Italian bread.
28 oz. Choice-Cut Tomatoes
1 Tablespoon Olive Oil
2 Tablespoons Crushed Basil
1/4 teaspoon salt
1/4 tsp. ground red pepper
1/2 tsp. Minced garlic
4 cups Angel Hair (cooked)
1/4 cup goat cheese
Combine first 6 ingredients in saucepan and place on low while pasta is cooking
(approx. 5 minutes). After draining pasta serve 1 cup pasta with 1 cup tomato
mixture and 1 Tablespoon cheese. About 290 calories below 7 g. fat.
