1 C. (14.5 ox) refried beans – vegetarian
4 plum tomatoes- chopped/seeded
¼
c. chopped green onion
1 clove garlic – minced or ½ tsp. Chopped garlic
2 tsp. Ground cumin
1 ½ tsp. Fresh lime juice
8-10 soft flour tortillas (keep fat content to 2g. or less per serving) There
are many different flavors including tomato and whole wheat tortillas!
2 large peppers
8 oz. Mushrooms- chopped
1 ½ c. low-fat cheddar-jack cheese – shredded
2 c. salsa ( I love Newman's Own)
Mix together peppers, mushrooms, garlic and onions (in about 1-2 tsp. Olive
oil) and cook until tender. Meanwhile in a small bowl, combine cumin, lime
juice and hot sauce in small bowl. When vegetables are cooked, add bowl mixture
until combined and then add beans and stir all ingredients together until thoroughly
mixed.
Take a tortilla, spread with bean mixture (1/4 –1/2 c.) top with cheese
and place another tortilla on top. Place tortilla in a large nonstick skillet,
medium heat. Cook about 3-4 minutes each side or until nicely browned. Transfer
to plate and slice into quarters or eighths. Serve with a side of salsa and
fresh sliced lettuce. Yummy!
