Better-tasting and healthier than most health-store fare, these custom bars can be whipped up at home in less than 10 minutes

2 cups vanilla-flavored whey-protein powder
1 cup egg whites
1 tsp. vanilla extract
1 1/2 cups unsalted cashews
1 1/2 cups raw almonds
1 cup dried cranberries

  • Preheat oven to 350 degrees.
  • In a large bowl, stir together the protein powder, egg whites, and vanilla extract, until you have a thick, caramel-like consistency.
  • Slowly stir in the nuts and cranberries, mixing thoroughly.
  • Press the mixture into a 9-by-9 nonstick baking pan coated with cooking spray, spreading evenly until the entire mixture is about an inch thick.
  • Bake for 10 minutes-don't overbake. (You'll know the bars are ready when a slight crust forms on the surface, but you should still feel some give when you press with your fingertip.)
  • Cut into 12 bars and refrigerate in plastic wrap. Cut smaller for quick-snack size.

Serves 12.
Nutritional analysis per serving: 340 calories, 23 g protein, 17 g carbohydrate, 20 g fat (good fat), 4 g fiber.
