A couple of nights a week I work late so coming home one night I had a strong craving for red sauce but was Italian “fooded” out. So, I decided to create a quick Greek chicken with tomatoes. It was really good so I thought I’d share.
- 4 chicken breasts - (Marinade for about 30 minutes while preparing other food)
- Marinade - (½ c. lemon juice, 1 tsp. crushed garlic, 2 TBSP Olive oil).
Preheat the grill about 5 minutes before you put chicken on.
Mix together in saucepan:
- 2-cans fire roasted tomatoes (Muir Glen Organic)
- 1- can Amy’s Organic Cream of Tomato Soup
- 2 tsp. oregano
- ¼ tsp. cayenne pepper (that’s optional, I like spice)
- 1 tsp. garlic powder
- ½ tsp. cinnamon
Let the flavors blend over a low heat for about 20 minutes.
When meat has marinated for about 20-30 minutes, grill and cook thoroughly.
Boil water for the Orzo and when water is boiling , cook Orzo according to package directions.
When chicken is cooked, slice into strips and set aside. Drain orzo.
Place ¾ c. orzo on plate, top with chicken and cover with ½ c. of tomato mixture. Top with 1TBSP Feta Cheese (optional) Yum!
I serve this with a nice mixed green salad and green beans. Enjoy!
